New Modern Cocktail Bar Coming To Lindenhurst This Spring

LINDENHURST, NY - A Lindenhurst couple will be opening a new cocktail bar in town this year. Local residents Jonathan and Gabrielle Gonzalez are planning on opening their business, Hunter & Thief on 21 W Hoffman Avenue this spring.

Patch: What makes your business unique?

Gabrielle: We are a modern cocktail bar which is unique on Long Island. Our emphasis is on the cocktails. Everything is made in house from syrups and juices down to some of the bitters. The ice is hand cut. We aren’t cutting any corners when it comes to the quality. We are trying to bring back a level hospitality that seems to have gotten lost in recent years.
P: What's the best business advice you've ever received?

G: My brother and vital member of our build out team Joshua Bebbino also of Lindenhurst always says "just keep on keeping on" which is really good to remember when unforeseen things pop up and you feel discouraged or things get tough. Just keep going. Our long time friend and owner of whiskey down diner in farmingdale peter kanaras has always said to find the people with solutions. Which really helped us through the initial buildout. There will always be a solution to every problem just have to find it
P: Why did you decide to open your business in Lindenhurst? Why is this a good place for your business?
G: My family came and settled in Lindenhurst in the late 1920’s. My grandmother was born in Lindenhurst followed by mother. My mother met my father in Lindenhurst. They bought a house and raised 3 kids in Lindenhurst. We graduated from Lindenhurst high school. I met my husband while living in an apartment on 1st street. We had a son, and got married. This is home to us and no other place to open our 1st business together would make sense. This is it. Also the community of like minded business owners is awesome. We’re all trying to work together to make this revitalization successful and it’s a real special team. We are so grateful for the support and help.
P: What makes Lindenhurst special?
G: I have nothing but the best memories of my childhood growing up in Lindenhurst. Playing for the little league. Going to festivals in the town. It was and very much still is a hardworking great community for families. And living in Lindenhurst during hurricane sandy just really spotlighted the resiliency of the community and watching it come back to life through the efforts of RJ Renna Joe Barone and the rest of the government has been something we are so grateful to be a part of. The sense of excitement and community amongst the business owners in the town is palpable. It’s a great time for Lindenhurst!
P: What's one thing you want your customers to know about your business?
G: We care. Your experience matters to us.
P: What's one fun fact about you?
G: Our 2-year-old son's name is Wolfgang Attenborough Gonzalez, my husband is obsessed with Sir David Attenborough, the British naturalist. We sent him a copy of his birth announcement and he replied. It’s framed and hung in Wolfgang's bedroom.
