Survey says? More vegan and vegetarian options at Marist College

Feedback from recent student dining satisfaction surveys included numerous requests for a more robust vegetarian and vegan presence

Supporting the student driven push toward vegetarian and vegan diets, Marist Dining by Sodexo launched new vegan and vegetarian initiatives across campus.

Feedback from recent student dining satisfaction surveys included numerous requests for a more robust vegetarian and vegan presence on campus menus.

Meatless Mondays are now underway, in addition to offering vegan smoothies on “Thirsty Thursdays” and avocado toast on Friday mornings. The 8-Allergen Free Simply Servings stations continue to feature sides that are always vegan. Campus retail locations are expanding their product lines.

Marist Dining also provides special options for vegetarian and vegan students during all special events, including a weekly themed pop-up called Valley Café.

Introduction of these options are a collaborative effort between the culinary team and the new on-campus dietitian, Marie Murphy. In her campus role, Murphy supports students with nutrition-related needs, including food allergies, special diets, nutrition-related medical conditions, and training/recovery for athletes.

The idea is to accommodate these diets with fresh new ideas every semester, such as zucchini “zoodles” to replace noodles, cauliflower wings to replace chicken wings, and Beyond Burgers to replace beef burgers.

“We are constantly adapting to best meet the needs and wants of Marist students,” said Marketing Specialist Kate Cole. “The entire process is evolutionary based on valued feedback. We seek innovative ways to deliver variety and creative culinary options.”
