Reimagined Salmon Dinner Featuring Chef Francisco Castillo of Cafe Bar J.F.

From the glacial fjords of Vancouver Island to the legendary coasts of Peru and Chile, the Pacific Ocean inspires a one-night-only South American seafood feast hosted by restaurateur Juan Correa of Llama Inn and Llama San, and chef Francisco Castillo, whose pedigree includes world-renowned icons Boragó, Central, and Amelia. Drawing from the duo’s new Brooklyn sensation, Cafe Bar J.F., this special evening pairs their celebrated approach to South American seafood with pristine Skuna Bay salmon.

Harvested in cold, glacier-fed waters, Skuna Bay salmon is prized by world-class kitchens for its exceptional purity and buttery richness—making it an ideal canvas for Castillo’s cooking. Moving beyond standard salmon preparations, this multifaceted feast highlights the fish in reimagined ways, blending refined modern techniques with the vibrant flavors of South America. 

This one-night-only dinner will feature a cocktail reception with passed hors d'oeuvre upon arrival, an expertly crafted multi-course menu with thoughtfully curated wine or beverage pairings, and a Q&A with the featured chefs.
