Adriaen Block's signature stoney Negroni has a very special ingredient that, alas, will not get you blazed but could produce a much needed calming sensation in the midst of a fraught holiday season. And for those not looking to taste the strange, The Bonnie stirs up its Negroni with wood-aged gin.

Chefs Jean-Marie Perrot and Sylvain Aubry have adapted their succulent rotisserie chicken recipe for cooks without a professional kitchen. The trick is buying a humanely-raised bird, preferably Amish, and giving it lots of time to soak in buttermilk, garlic and lemon.

Side Dish: Roasted Acorn Squash with Crumbled Pork Sausage from Boqueria in Manhattan

Chef Marc Vidal pairs his acorn squash with toasted hazelnuts, spreadable pork sausage and sharp Mahón cheese. The Majorcan sausage adds a smoked paprika aroma and a bright crimson color. Cheese, local honey and hazelnuts add a hint of sweetness and a welcome crunch.
