NEW YORK CITY — A rooftop cocktail bar in Midtown has released a new spring and summer menu for New Yorkers to enjoy.

The Skylark, set thirty stories above ground in the heart of Times Square, is debuting its new menus from executive chef Coyd Jordan who has incorporated bold Jamaican flavors and fresh, local ingredients including burrata by Lioni Latticini made from 100 percent cow’s milk and sourced from the Hudson Valley.
“The intention behind this menu is to make every guest at The Skylark feel welcomed with familiar flavors and comforting aromas, sparking conversation around the table and leaving guests with a lasting impression long after their visit," Jordan told Patch “Each plate is thoughtfully designed to elevate classic inspirations into something distinctive, creating a dining experience that feels both approachable and memorable.”

Menu highlights include:

The Skylark’s staple Burrata Bites ($18): made with locally sourced burrata from upstate New York, accompanied by a sweet strawberry compote and finished with a drizzle of white balsamic and mint.

The Pimento & Jam ($16): offers guests a shareable dip evoking nostalgia with Ritz crackers and plantain chips with fresh mango.
The Crab Tart ($22): offers an East Indian style inspired curry paying homage to the iconic Guyanese curry in a tart shell finished with lump crab, basil, lime leaf, and coconut.
The Jerk Chicken Gougère ($20): is inspired by Rasta Pasta, a creamy Jamaican Italian pasta dish, and is packaged in a small bite with bold flavors including house smoked jerk chicken and mango salsa.
The Skylark’s seasonal cocktail offerings include:

The Cherry Blossom ($22): with sesame, Condesa Clásica, sake blanc vermouth, and cherry blossom.
The Strawberry Lemongrass ($22): with clarified milk punch, Grey Goose, citral, strawberry, lemongrass, black tea and soda.
The Mint Passion Fruit ($22): with Diplomático Reserva, mint, passion fruit, lime and sparkling wine.
The Skylark also offers non-alcoholic options including a spritz and a sparkling wine.
The Skylark, at 200 W 39th St, is open Monday through Friday from 5:00 p.m. to 12:00 a.m. and features floor-to-ceiling sliding windows and a mix of private nooks and communal seating.
On the rooftop terrace, guests can enjoy spectacular sunset views.
