The Cookery in Dobbs Ferry to Host Prix-fixe Dinner on New Year’s Eve

On New Year’s Eve, Executive Chef David DiBari’s The Cookery in Dobbs Ferry will offer a three-course dinner and continuous bites to guests at a prix-fixe cost of $75 per person. The evening’s festivities will also include a champagne toast. The menu follows:

Starters

1. Cheese curds, fried, hot honey, pickled fennel fronds
2. Heirloom meatballs, pomoddoro, parmigiano, parsley
3. Bloominghill greens, chopped, cricket creek feta, spiced sunflower seeds, grainy mustard vinaigrette
4. Mozzarella, olio novello, grilled tuscan bread
5. Broccoli, wood charred, bourbon sauce, spiced beef tendon chicharrones
6. Octopus, fried, smoked tomato “marinara”, pistachio, serrano chili

Main courses

1. Ravioli, cauliflower, lemon brown butter, garlic, parmigiano
2. Spaghetti, spaghetti pork and clam sausage, garlic, chili, lemon
3. Radiatore, lamb bolognese, parmigiano, fresh mint
4. Branzino, grilled, celery root zabaglione, brown butter pears, chili
5. Pork osso bucco crisp, creamy white polenta, apple mustard
6. Market steak, grilled, goose fat potatoes, baby kale, pickled garlic vinaigrette
7. Free bird chicken, char grilled, smoked local cabbage, Cannelini beans

Desserts

1. Stick abutter, almond crust, caramel
2. Warm chocolate polenta, graham cracker and toasted marshmallow
3. Sticky date cake, caramel sauce, Jane’s vanilla ice cream
