
I think more people would eat things like chickpeas, beans and lentils if they knew what to do with them. Chickpeas, also known as garbanzo beans are an excellent vegetarian source of protein, iron and fiber. They are also naturally low in fat and super cheap. I picked up this recipe from a client (thanks Rich) and have been passing it along to everybody I know- it is that good and easy. Try it and let me know what you think.

1 can chickpeas

1 1/2 Tb olive oil
Seasoning such as, salt Cayenne pepper, cumin
Preheat oven to 400 degrees. Rinse and dry chickpeas. Place on baking sheet and toss with olive oil. Bake 35 - 40 minutes until crispy. Season to taste and enjoy!
