On the Clean Elimination Diet, breakfast is my biggest challenge. No muffins, no scones, not even cereal. I love a big mouthful of carbs in the morning. Then I remembered that thiswas mentioned in Clean. It said something about brown rice for breakfast. So I put some leftover brown rice into a bowl, topped it with blueberries, covered it in almond milk, and sprinkled some coconut crystals over the top as a sweetener. I tasted the first spoonful with great trepidation….It wasn’t half bad. Did I love it? No. But it was a very filling – and healthy – breakfast. Lunch was a no-brainer. I sliced an apple and dipped it in almond butter. Dinner was also a breeze – grilled chicken breast sliced into a salad. So my first full day of the Elimination Diet was a huge success. Only 13 more to go before the BIG CLEANSE.
