BUDS launches new fruit juice and veggie station
A new dining station will debut on campus at Binghamton University this fall.

A new dining station will debut on campus at Binghamton University taking inspiration from zoodles and the high demand for fresh fruit and vegetable juices.
The station is called Fresh Impressions which will replace Sweets & Eats (originally Starbucks) in the MarketPlace at University Union. Fruit juices will be offered throughout the day while the zoodles menu will begin in time for lunch and through the dinner hours.
Offerings feature a Buddha Bowl with sweet potatoes and beet zoodles sautéed with teriyaki tofu; a Southwest Bowl starring corn, beans, and a cilantro lime sauce; a Mediterranean Bowl with vegan pesto sauce and vegan feta; and an Italiano Bowl with vegan marinara and chickpea meatballs.

Juices will feature oranges, carrots, beets, lemons, limes and ginger.
Executive Chef Kara Perez and MarketPlace retail managers Chris Harasta and Juan Medina of Binghamton University Dining Services (BUDS) designed the concept based on the popularity of fresh pressed juices and the success of a pop-up zoodles station last semester.

The station logo for Fresh Impressions was designed by Sarah Schoenfeld, a Binghamton University senior and student athlete.
The station is expected to be open and serving in time for Welcome Week and the start of the fall semester.
