
Refreshing and innovative dishes, complementary wines, beers and cocktails anchor new menu
Cellar 49, the restaurant located in the historic Biddle Mansion of the Tarrytown House Estate, recently unveiled its new summer menu, designed to satisfy guests’ palates with fresh, seasonal ingredients in creative and enticing combinations.

From creative bar snacks to exquisite entrees, Executive Chef Chris Hettinger and Chef de Cuisine Ryan Sachs have devised a menu that pleases.
Small plates include flat breads topped with lamb sausage, piquillo peppers and ricotta cheese; bourbon cured salmon with bourbon smoked sugar, caviar, bacon and olive oil; crab cakes and a selection of salumi and cheeses. For a real taste of summer, try the watermelon gazpacho soup with jalapeño tequila, the beet salad with arugula, goat cheese, citrus and shallot vinaigrette or Cellar 49’s Caesar salad, which is a new take on an old classic, featuring bacon and anchovy basil dressing.
Main courses include a selection of fish, game, meat and vegetarian entrees including Skuna Bay Salmon with wild mushrooms, risotto and a lemon emulsion; veal served with potatoes and prosciutto wrapped asparagus in a wine demi-glace sauce; a skirt steak with chimichurri and even bucatini with chucked corn, asparagus, roasted tomato and parmesan cream is an option.
The Cellar offers small production wines by the glass and bottle, local beers and crafted cocktails to complement meals or to enjoy at the bar. The carefully selected wines on the list are listed from lightest to full-bodied, and servers are pleased to offer recommendations to guests based on their preference and meal selections.
