Beyond Sushi's Vegan Eats Coming To UWS, Report Says
The vegan sushi restaurant, which just opened its seventh location on the UES, is also planning a UWS spot, Eater reports.

UPPER WEST SIDE, MANHATTAN — Vegan sushi that has appeared on Shark Tank and is quickly expanding its Manhattan outposts could be coming to the Upper West Side next, owners told Eater.
Beyond Sushi, which opened its first location on East 14th Street in 2012, told the food outlet that one of at least three locations it plans to open in the next few years will be on the Upper West Side.
The other two will be in Williamsburg and a spot at 1429 Third Ave. on the Upper East side that it will be debuting next month.

The restaurant chain is run by owner and chef team Guy Vaknin and Tali Vaknin and specializes in meat-free sushi for vegan diners.
"At Beyond Sushi, we appreciate the wholesome produce that Mother Nature has gifted us," Beyond Sushi says on its website. "Therefore, we avoid all meat and seafood alternatives in our ingredients. Chef Guy Vaknin and his culinary team have elevated the meaning of eating vegan by offering a fast-casual menu with high-end appeal."

The Vaknins did not yet reveal details and a timeline for the Upper West Side or Williamsburg locations, but said that their new spate of restaurants will be a "more sophisticated" version of the grab-and-go storefronts they started with .
“I want the ability to get more creative,” the chef says. “We’ll have a better equipped kitchen with a smoker and an open-flame grill.”
