This weekend the weather is supposed to get pretty chilly, so why not stop by the Windsor Terrace Greenmarket for soup ingredients?
Quick, easy, cheap cabbage soup: Grab a head of cabbage, potatoes, parsnips, onions, garlic, parsley, and a loaf of bread. Chop everything up (except the bread). Saute the onions and garlic in some olive oil, then add the potatoes and parsnips and cover with water (or stock if you have some). When the potatoes are just about cooked, add the cabbage and cook until it's soft. Season with salt and pepper and add a dash of vinegar, top with parsley, then eat with a big hunk of bread for dipping.
If you want to make it more hearty, start by rendering some bacon (picked up at United after you visit the Greenmarket), add some canned white beans at the same time that you add the cabbage, and/or top with Parmesan cheese.
Also, remember that this is your last chance to pick up Greenmarket pumpkins before Halloween! J Glebocki Farms and Williams Fruit Farm have both had some interesting varieties this month, so stop by for a gourd you won't find anyplace else nearby.
