A Raleigh-based pop-up tap room is among the 15 most elite brewery operations in America this year, according to a popular beer magazine.
The editors at Hop Culture have included Ancillary* Fermentation from Raleigh/Durham, North Carolina on its exclusive list of just 15 breweries in the nation "to watch" in 2019.
The editors at Hop Culture describe Ancillary* Fermentation as a brewing operation that has stayed true to the core values while staying small and local.

"Ancillary Fermentation is a fermentorium, and an art project, and a traveling conceptual pop up taproom, and a brewery, and a lot less pretentious than it sounds. It’s a partnership between a bunch of Raleigh-Durham beer folks, centered on the idea that beer should be more experimental, more experiential, and a hell of a lot weirder," the brewery's website says.
“We’re particularly intrigued by the concept of the pop-up taproom, and expect that 2019 will bring some exciting new themes,” Hop Culture said.
