Cindy Koller-Kass, an authority on the gluten-free diet, admits that living gluten-free is a daunting task. Her mission as President of the Greater Cleveland Celiac Association is to help educate and support folks who must adjust to a new way of eating.
More than two million people in the United States have celiac disease, an autoimmune disorder of the small intestine, and the only effective treatment is a gluten-free diet. The Greater Cleveland Celiac Association is committed to helping people become comfortable with the gluten-free diet. According to Koller-Kass, "We are celiacs helping celiacs."
