TULSA, OK — At TU Dining at the The University of Tulsa, Team Member Ernest Soto has carried a spirit of service throughout his life — first in the military and now through his continued support of fellow veterans in the Tulsa community.

Soto, a Native American Vietnam veteran, served in the United States Navy from 1970 to 1976 as an MM2 Machinist Mate Second Class Petty Officer. Reflecting on his years of military service, he says the experience shaped the values he carries with him every day.

“My time in the military taught me discipline, resilience, and the importance of supporting those around you,” Soto shared. “It is an experience that has stayed with me throughout my life and continues to shape who I am today.”

Since joining Sodexo in November 2025, Soto has become a valued member of the TU Dining team, where he has embraced opportunities to continue learning and growing in the culinary field.

“My experience here has been both interesting and enjoyable,” he said. “I’ve appreciated the opportunity to learn new culinary concepts and continue growing through new experiences every day.”

Outside the kitchen, Soto dedicates time and energy to supporting fellow veterans through the Veterans Coffee Bunker, a nonprofit organization focused on helping veterans transition successfully into civilian life. His involvement includes donating leftover food from the Pat Case Dining Center, assisting with transportation needs, and volunteering whenever possible.

“I have always tried to support veterans however I can,” Soto explained. “Many veterans returning to civilian life after military service face challenges adjusting back to peacetime life. Some struggle with the transition, and I believe it is important to support them and help make that transition easier whenever possible.”

The impact of those efforts has not gone unnoticed.

“Ernest Soto, a Vietnam Navy veteran and outstanding chef, is a food angel for veterans,” shared The Coffee Bunker. “He regularly brings in leftovers, always keeping the well-being of our vets in mind. A big thank you to Chef Soto for his generous contributions!”

Soto believes even simple acts of kindness and support can make a lasting difference.

“These efforts help veterans feel supported, connected, and cared for,” he said. “Even small acts of service can make a meaningful difference in someone’s life and remind them they are not alone.”

Supporting veterans and military families is a mission deeply valued throughout the Sodexo team at TU Dining. The commitment is especially meaningful to Executive Chef Krista Conner, whose husband, Matt Conner, served in the military.

“Being able to give back to those who have served through hospitality, care, and a great meal is truly an honor for our team,” said Conner.

For Soto, the message is simple: everyone can help.

“I fully support those who dedicate their time and efforts to helping veterans,” he said. “I encourage everyone to get involved however they can. Every contribution, no matter how small, can have a positive impact.”
