Momma T Cooks Up some Chicken

Need a recipe for tonight?

Looking for a simple solution for dinner tonight? I have it right here for you! This is a quick and easy way to prepare boneless, skinless chicken breasts that the whole family will enjoy. The best part is, you will need only five ingredients and five steps.  It is nice and simple.

 

Ingredients:

2 boneless, skinless chicken breasts pounded to under half an inch thick, cut into pieces smaller than your hand. 

2 eggs beaten

1 cup flower

1 cup breadcrumbs (I prefer Progresso Italian Style breadcrumbs)

½ cup olive oil

 

Directions:

  1. Place flower in a wide, shallow bowl, then (whisked) egg in another wide shallow and finally breadcrumbs in a wide shallow bowl. 
  2. Heat ½ cup olive oil in a 12-inch frying pan on medium heat.
  3. Next coat the chicken one at a time, first in flour, then egg (getting the entire piece covered with egg) and then breadcrumbs one at a time and place gently in the heated oil. 
  4. If the oil splatters excessively, turn down the heat.  Flip the chicken when golden brown.  Be gentle as the breading could crumble.
  5. After browned on both sides, place the cooked cutlets on a paper towel to cool and to soak up excessive oil.

 

You are DONE!  This is a great meal to please the kids and the adults.
