ARDMORE, PA — Ardmore has a new black-, woman-owned spot for hungry residents to get a staple of American cuisine: burgers, fries, and shakes.

Bikini Burger, located at 44 Rittenhouse Place in Ardmore, held a ribbon cutting on Thursday with the Ardmore Business Association.

Mia Robertson is the woman behind Bikini Burger.

The idea to open a burger joint was kicked around for a while, and when Robertson and her team found the right mixture for her burgers, it all came together as Bikini Burger, referencing Robertson's love for the beach.

"We didn't rush anything, we wanted to make sure the recipe was right," a representative for the restaurant told Patch.

The burger spot is open from 11 a.m. to 11 p.m. daily and offers simple classic burgers made with double ground 80 percent lean and 20 percent fat blend of sirloin, brisket, rib eye, and chuck. The beef supplied directly to Bikini Burger from an "old-school" butcher in Lancaster, the representative said.

Burgers are made to order and served on a seeded Martin's roll with lettuce, tomato, onion, a Vlasic dill pickle, and Cooper Sharp cheese. And no ingredients are sourced from food service wholesalers.

Customers can also opt out of any topping that comes standard with burgers.

There is no "secret" or "special" sauce on Bikini Burger's offerings, letting the quality of the meat shine. The Bikini Burger philosophy is that such a sauce only serves to mask lower quality meat.

And there are no smashburgers at Bikini Burger. Robertson understands Ardmore is not smash burger territory and "wouldn't entertain the thought of smashburgers" on her menu. Robertson and the team are native to the area and know what their neighbors expect.

Other burgers available are turkey burgers, black bean veggie burgers, surf and turf burgers with shrimp.

For sides, Bikini Burger serves whole potato crinkle cut fries and potato salad.

And what's a burger meal without a shake? Diners can get handcrafted milkshakes in strawberry shortcake, classic chocolate, summit vanilla flavors.

While Bikini Burger held its grand opening last week, it's been serving hungry customers for a few months now.

And the reception has been positive.

"They're very happy," a representative said of its customers. "The first bite is a delight, sends them fireworks."

The business Instagram page is fulled with customers trying their first bites and giving high praise.

"The burgers are head nodders," the representative said "You get the finger wave and point. That's when you know it's good."

Bikini Burger wants to be known as Ardmore's classic, simple burger shop and is focused on ensuring it is serving high-quality products year round.

"We concentrated on keeping quality at high standards."
