Cucumbers!

Make this refreshing summer salad which is great with grilled salmon.

I am always looking for delicious and non-fattening dishes to keep in the refrigerator when I want a nosh. Since my cucumber vines are producing an abundant amount of cucumbers, I decided to make cucumber soup and a super easy Japanese cucumber salad which I will share with you now. 

Cucumbers Sunomono

2 large cucumbers
1 small shallot, sliced thin
1/3 C rice vinegar
4 tsp. sugar
½ tsp. salt
2 slices fresh ginger, finely chopped

  1. Peel and halve the cucumbers the long way.
  2. Scoop out the seeds and slice into thin half moons. 
  3. Combine the remaining ingredients and pour over the cucumbers. 
  4. Refrigerate and let marinate at least 1 hour.
  5. Enjoy.
