BETHLEHEM, PA — Lehigh University Dining by Sodexo is giving faculty and staff a new way to connect with campus dining: a turn as guest chef at the Fud Truk.
For the program, dining services invites faculty and staff members to choose a signature sandwich, often one with personal meaning. During the summer, each guest chef filmed a video showing a member of the dining team how to make it. When that person's turn begins, dining services releases the video and offers the sandwich as a Fud Truk special.
Concessions Manager Dan Burke runs the program, working with members of the culinary team who have included Executive Catering Chef Chad Licsko and General Manager Chris Wallace.
This academic year's invited guest chefs are Mary Jo McNulty, director of employee engagement; Eric Markovcy, director of sports performance; and Jason Schiffer, chief of police. Their features are scheduled across the academic year, with one in the first half of fall, one in the second half and one after spring break.
The program gives colleagues whose jobs may rarely bring them into dining operations a chance to work alongside its team and share a bit of themselves with the campus community. For other food service providers, it offers a practical idea: invite familiar faces from across campus into the kitchen, then let their recipes tell the story.
