Five Easy Recipes Using Thanksgiving Leftovers

Shake up the re-heated turkey and gravy routine with these ideas.

1. Make some turkey turnovers using this Fox News recipe:

Cut two sheets of puff pastry into 8 squares. Divide and layer 1 cup leftover chopped turkey meat, 1/3 cup brie, cut into squares, 1/3 cup cranberry sauce, and a dash of salt and pepper. Fold the pastry into a triangle, pinch sides to seal, and score the top. Bake at 400 degrees for 15 minutes.

2. Serve mashed potato cakes for breakfast.

Combine 2 cups of mashed potatoes with 1 large egg. Throw in some cheese and salt if desired. Refrigerate until very cold, then form 6 flat rounds and fry them up in a frying pan.

Combine 3 cups stuffing and 1/2 can of French fried onions. Spoon into 9-inch baking dish and press along bottom and sides. Combine 1 can condensed cream of celery soup, 1 1/2 cups of cubed turkey, and 1 (10 oz.) package of thawed frozen peas. Pour over stuffing. Cover and bake for 30 minutes at 350 degrees, then top with remaining onions and bake 5 minutes longer.

4. Dress up that classic turkey sandwich.

Layer cold turkey on wheat bread with sprouts, honey mustard, and white cheddar cheese, or try it hot on Italian bread with spicy ranch dressing, Provolone cheese, and banana peppers.

Bake a package of 48 frozen cooked meatballs according to the directions.  Meanwhile, combine 1/2 cup cranberry sauce, 1/4 cup orange juice, 2 tablespoons sugar, 1 tablespoon minced ginger root, and a dash of white pepper in a saucepan and cook about 5 minutes. Add meatballs and stir to coat.
