Waffles and Weather? The Secret Ingredient in a Successful Business Recipe

Waffatopia Co-Founders and Chief Waffatiers Brian and Andrea Polizzi appeared on The Weather Channel’s “AMHQ” morning show live in Atlanta Monday morning to demonstrate the role weather played in the founding of their West Chester-based Artisan Caramelized Belgian Waffle company in 2013.

Waffatopia waffles are made with yeast-risen dough and not batter. Just as with bread dough humidity levels are critical in the preparation. It’s something the Polizzis discovered through trial and error as they researched, experimented, and tested with several humidity levels to get the perfect balance for the two-day process of creating each Waffatopia waffle.
“If the air is too humid, the dough can become slimy and if the air is too dry the waffles can become flat and flaky,” Brian Polizzi explained.

During The Weather Channel segment Monday morning, Brian and Andrea Polizzi told fellow Penn State alum and Weather Channel Meteorologist Maria LaRosa (formerly of CBS3 in Philadelphia) about the process that went into finding the perfect dew point for creating Waffatopia’s Caramelized Belgian Waffles. “It literally wound up changing the strategic course of our business. We were going to be outdoors doing food trucks and carnivals but then we realized this process is very different,” says Brian. “It’s a problem that a lot of bakers run into,” LaRosa pointed out.
The Polizzis have found the perfect balance of temperature and humidity for making waffles. Waffatopia waffles are produced in a strictly-controlled climate in the Waffatopia production kitchens in West Chester, PA.

“We do all the hard work for you (to enjoy a perfect waffle) up front,” Andrea told the AMHQ team. “We process them, we cool them, we send them out fresh the same day that they are made. When they arrive at your home, you can toast them put them in a wax sleeve and you’re off and running!” Waffatopia waffles come in five delicious flavors and are made with imported Belgian pearl sugar so they are naturally sweet and need to messy syrup to enjoy “on the go.” They can be enjoyed hot out of the toaster or oven as well as directly from the package.
The smell of fresh Waffatopia waffles proved more than AMHQ star Sam Champion and the rest of the on-air team could resist as they ‘crashed’ the segment with Maria. Joined on set by Meteorologists Mike Bettes and Anaridis Rodriguez, Maria LaRosa, who also writes a blog called “Momerology,” pointed out that Waffatopia waffles are made with real and fresh ingredients and added “I pack these in the kids’ backpacks for after school because you don’t need to cook them, they can just eat them right out of the package!”
