The pair have tapped Chefs Dan Merola and John Hearn, the chef/owners of Roots Café in West Chester and the visionaries behind the culinary-based consulting firm Fleur De Sel, as their culinary consultants for creating The Wave, an upscale 60-seat restaurant located under a 2,000 square-foot pavilion adjacent to the pools.
Merola and Hearn’s menu will include a variety of scratch-made appetizers and entrées for lunch and dinner, along with summer-friendly desserts served both at The Wave as well as at an on-site food truck, which will operate on the property all summer long.

Splash is a newly restored summertime resort for families of all ages in Delaware County featuring three family-sized swimming pools, a fire pit, luxurious cabana seating, a newly renovated basketball court, a landscaped Wiffle Ball field and an air-conditioned game room featuring X-box and Nintendo consoles.
"At The Wave, we want to focus on producing really satisfying menu options that look and taste like they’ve been prepared at an upscale restaurant, including a variety of street tacos, a certified black angus burger, overstuffed sandwiches, a selection of artisan flatbread pizzas and a handful of summer salads," said Hearn. "This is a swim club where there will be many families enjoying the comfortable confines of a poolside restaurant, so we want to offer options which will feed the entire family while not breaking the bank. We’re intent on making The Wave a high-quality, family-friendly restaurant that is accessible to Splash members as well as to the public."
Merola and Hearn are also unveiling family-sized entrees and sides, including a 32 ounce Ribeye steak with Pommes Frites and grilled vegetables; fried chicken with macaroni and cheese, coleslaw and potato salad; half rack of ribs with collard greens with mac and cheese; and fish & chips with French fries and coleslaw.
Splash will make its debut at the former site of the Marple-Newtown swim club with a ceremonial “first splash" on May 25 at 10 a.m.
The resort-style swim club and The Wave will be open from 10 a.m. through 10 p.m. daily, with the pools closing at 8 p.m. nightly.
