Maris Grove Chef Shares Recipe for Super Bowl Parties

Looking for a delicious dish for your Super Bowl Party? Executive Chef Justin Pagano from Maris Grove, an Erickson Living senior living community in Glen Mills, Pennsylvania, shares his Super Bowl Empanada Blitz recipe below.

Empanadas are small Latin American pies, baked or fried, a flaky dough wrapped around a filling, usually savory but sweet work also. Theses non-traditional fillings make them perfect for the Super Bowl.

The Super Bowl Empanada Blitz

1. Coach’s Cheesesteak

For the Dough Makes enough for 24 pastries

For the Fillings

Coach’s Cheesesteak: 6 portions

8 oz. Shaved Chopped Rib Eye Steak

2 Tbs Small Diced White Onions

1 tsp Minced Garlic

3 oz. Grated Extra Sharp Provolone Cheese

Salt and Pepper

  • Sauté onions until translucent, add garlic cook until fragrant, add steak, salt and pepper to taste, remove from heat when still medium rare, chill and reserve.
  • Fill each empanada with .5 oz. cheese, and 1 oz. of steak
  • Serve with sriracha infused ketchup, (1 part sriracha and 5 parts ketchup) and pickled peppers

Wingless Buffalo Bomb: 6 portions

8 oz. finely diced skinless chicken thigh meat

1 oz. Ranch Dressing

2 oz. Franks Red Hot Sauce

1 oz. pineapple juice

2 oz. crumbled blue cheese

Finely diced pineapple, 3 tbs

2 Tbs finely diced celery

2 Tbs sliced scallions

  • Combine the hot sauce, ranch dressing and pineapple juice, marinade chicken 1 hour or up to overnight
  • Saute marinated chicken, chill and reserve, add blue cheese, celery and scallions to chilled chicken
  • Fill each empanada with 2 oz. of chicken mixture
  • Serve with additional pineapple buffalo sauce and blue cheese dressing

Spinach & Artichoke Touchdown 6 portions

3 oz. cream Cheese

1 oz. parmesan Cheese

2 oz. sautéed drained spinach

2 oz. chopped artichoke hearts

Salt and pepper

1 tsp Caesar Dressing

1 tsp minced Garlic

  • Combine all ingredients
  • Fill each empanada with 2 oz. of the filling
  • Serve with roasted garlic aioli dipping sauce

Caramel Apple Extra Point 6 portions

2 Finely Diced peeled honey crisp, (or your favorite) apples

2 oz. caramel Topping

1 oz. dried cranberries

1 tbs corn starch

1 tsp cinnamon

2 oz. shredded sharp cheddar cheese

  • Combine all ingredients, mix well
  • Fill each empanada with 2 oz. of filling
  • Serve with Vanilla Bean ice cream
