Baby Bok Choy and Baby Bella Mushrooms with Cashews
Baby bok choy and baby bella mushrooms star in this quick and simple, delicious dish that is sure to become a new family favorite.
This is a quick and delicious recipe using one of my favorite greens - baby bok choy. I have adapted it slightly from a recipe I found on Simply Recipes - a really wonderful recipe site on-line.
Baby bok choy is a wonderful vegetable, it is mild and sweet, plus it is a good source of beta-carotene, calcium and folate...have i mentioned it is delicious?? It can be easily overwhelmed, so it benefits from simple preparation that allows it's flavor to comes through. As with regular bok choy, it can be grilled, steamed, braised or tossed into any stir-fry, salad or soup.
Look for bunches with vibrant green leaves and store in an open plastic bag in your veggie drawer. Try to use them within three days of purchasing.

Baby Bok Choy and Bella Mushrooms with Cashews
a small amount of good-quality olive oil or peanut oil
1 bunch green onions, washed, chopped
3 cloves garlic, minced
1-inch knob of ginger root, peeled and minced
1 pint baby Bella mushrooms, wiped clean, sliced
1 pound baby Bok Choy, washed, chopped
1 teaspoon dark sesame oil
Salt/red pepper flakes
Soy sauce/tamari, a splash
½ cup chopped, roasted and lightly salted cashews
Heat a bit of oil in a large sauté pan over medium-high heat.
Add onions, garlic and ginger and cook, stirring, until fragrant, about 2 minutes.
Add mushrooms and cook about 3 minutes.
Add bok choy and stir to combine. Sprinkle with sesame oil, salt and pepper flakes; cover and let cook 3 minutes.
Remove cover, lower heat and let cook 1 minute more. Sprinkle with a splash of soy sauce/tamari, and gently mix in cashews.
Serve immediately.
