Serendipity

a fresh perspective is sometimes all that is needed to invite serendipity into your kitchen. with just a minor tweak, this red grapefruit brulee becomes a simple pleasure.

From time to time, a fresh perspective on an old standard results in something wonderful. You make a tweak, a substitution or a mistake and serendipity (a happy accident) occurs.

This morning I enjoyed a beautiful red grapefruit for breakfast. I sprinkled a bit of raw sugar over both halves, but instead of just digging in, I set the broiler to preheat. I placed the grapefruit halves under the broiler for just enough time to allow the sugar to bubble a bit and brulee. Even though brulee literally translates to 'burnt' - you don't want to burn or overcook here. You are simply caramelizing the sugar a bit and warming the top layer of the grapefruit. I feel that this quick warm-up encourages your grapefruit to just about burst with juice!

If you care to, add some flavor to that sprinkle of raw sugar...perhaps a bit of ginger or cinnamon, perhaps a touch of sea salt, or pepper or lavender or rosemary...
