According to the Inquirer, the list came about when the publication's food team named about 300 restaurants to be considered for "The 76."
Each of these spots got a visit by Inquirer staffers or contributors. For example, the Inquirer's premier food critic Craig LaBan ate about 100 meals in 12 weeks and prolific industry reporter Michael Klein tried about 30 hoagies in the region.
They were then judged on what role each restaurant plays in the regional food scene, levels of service, food preparation, and vibes.
The food team whittled the 300-some restaurants down to the 76 most essential places to eat in and around Philly.
