PITTSBURGH, PA — The Allegheny County Health Department has issued a consumer alert for Carbonaras Ristorante, on Mt. Lebanon Boulevard in Castle Shannon, for numerous health code violations.
During a recent inspection, a lidded container of pasta with beans in a walk-in cooler prepared the day prior to the inspection was observed at 44 degrees, indicating that it never reached a finished cooling temperature below 41 degrees.
That is a high-risk violation.
Also in the walk-in cooler, a small lidded cambro of Alfredo prepared the day prior to the inspection wasobserved at 42F, indicating that it never reached a finished cooling temperature below 41F degrees.
That's another high-risk violation.
According to the inspection report, "the facility is not monitoring cooling times and temperatures."
There's more.
The facility’s mechanical dish machine was inoperable and the three-bowl sink was not properly set up to sanitize.
Two knives were observed stored in a knife block at the end of the cook line with food debris on the blade. The restaurant's can opener blade was encrusted in old, dried food debris.
Additionally, employee beverages without lids or straws were found to be stored on the tops of prep coolers and above food preparation surfaces throughout the kitchen. An employee was observed entering the bar coughing without covering their mouth or washing their hands.
A restaurant with a consumer alert placard is allowed to operate for a temporary period not exceeding 10 days. Another inspection is conducted either prior to the expiration of the temporary period upon request of the eatery owner or on the tenth day.
