I eat oatmeal several times a week. This week, I was looking for something different.

I was so excited to come across Fit Foodie Find’s recipe for Apple Cinnamon Breakfast Quinoa. I’ve been looking for ways to increase my protein intake — hello quinoa at breakfast! Quinoa is a complete protein and full of fiber and calcium. Yay!

Apple Cinnamon Breakfast Quinoa from Fit Foodie Finds

makes 1 serving (I doubled mine)

Ingredients
1/4 cup dry quinoa
1/4 cup cow/soy/almond milk (I used vanilla soy milk)
1/4 cup water
1/4 t cinnamon
1 packet of stevia (I didn’t use stevia, I used 1 1/2 teaspoons of raw honey)
2 T raisins
1 T chia seeds
1 medium apple, finely chopped

Directions
1. In a small saucepan bring quinoa, milk, and water to a boil.
2. Reduce heat and cover. Simmer on low for about 5 minutes.
3. Add in cinnamon, honey (stevia), raisins, apple, and chia seeds. Continue cooking on low until all liquid is absorbed.

I watched mine very closely after step 3. I added more soy milk when the liquid first absorbed because I didn’t think the quinoa was quite done yet.
