Weigh In Wednesday: What's New?

Trying new ingredients is all a part of my 21 day vegetarian journey. What new ingredients have you tried?

Beets are what's new for me.

I just finished Week 1 of my Ultimate Reset, and have found that I'm eating a few new foods. Ones I've never really tried, or taken a shine to in the past.

There are green lentils - finally tried a recipe I adored.

Millet. What? What's that? It's like a cross between couscous, quinoua, and brown rice.

And then, there are beets.

I love them.

Beets, carrots, onions, and chunks of sweet potato all chopped and coated in olive oil and Himalayan salt. Roasted for 50 minutes.

Perfection.

There's also zucchini/cashew soup. Yes.

So, my question for YOU today is this:

What new ingredient have YOU tried lately???? I never would have known that beets are delicious or that zucchini and cashews could make a wonderful soup, had I not experimented with the ingredients. Your turn.
