How does Frozen Custard differ from Ice Cream?
There's a big different between frozen custard, ice cream and soft serve.
That is the #1 question we get on a typical day at my Frozen Custard shop in Paoli. It comes down to one key difference in ingredients and the machine used to make the frozen dessert.
Both ice cream and Frozen Custard are made with milk, cream and sugar. The additional ingredient that gives Frozen Custard it's creamy texture is pasturized egg yolk.
The real key though, is my machine, which is manufactured in Wisconsin. Ice cream is made in a batch freezer, which pumps ~50% air into the ice cream mix. Soft serve custard, or any product that comes out of a soft serve machine, has ~80% air. A continuous custard machine only pumps ~20% air into the custard mix. The result is Wisconsin-style Frozen Custard, the most creamy, delicious frozen dessert one has ever tasted!
