Borelli's Bakery Eyes Bay Spring Store

Carmine Borelli already has a sign in the window of the former deli on the corner of Washington Road and Bay Spring Avenue.

Bay Spring is getting a bakery.

Carmine Borelli plans to open his third Borelli’s Bakery at 191 Washingron Road – the former Left of Center Deli on the corner of Bay Spring Avenue. The spot has been vacant for months. He's already got a sign in the window.

“I’ve still got to go through the zoning board,” said Borelli, who needs a special-use permit. “But I hope to open by the first of the year.”

The Barrington site will be his third location, he said. The signature store is at 805 Charles St. in Providence. His second location is the former DeFusco Bakery in Johnston. He plans to open a fourth location in Wickford.

“I like the area,” Borelli said of Bay Spring. “And outside of Vienna Bakery, I don’t think there is anything else in town.”

Borelli said he doesn’t see his bakery as direct competition for Vienna and its owner, Joe Balasco, who is a friend. He also shares a baker with Vienna.

“We’ll be totally different than Vienna,” he said. “And we’re not baking on the premises.”

Among the differences, Borelli said, is that he will offer pizzas, calzones, and spinach pies among the birthday cakes, pastries, Italian cookies, artisan breads, biscuits, cream pies, and turnovers that are a staples of all his bakeries.

Do you want a cup of coffee and a muffin? Borelli said he will offer that as well.

“All of our products are homemade,” he said. “Made with fresh ingredients.”

Borelli expects to be open from 7 am to around 6 pm seven days a week just like the other locations.

After he gets his special-use permit, he said, it will only take a couple of weeks to set up shop and open the doors.
