
This could be the most delicious macaroni salad you have ever eaten and it comes straight from my husband's Italian 'Nanny'. There are only 4 simple ingredients in this salad and it's a perfect side to many summer BBQ dishes. You can whip this up for a Memorial Day cookout (it's supposed to be nice on Monday!) or use it as a staple for when you are serving burgers, hot dogs, ribs, steak, grilled chicken, or other summer grilling favorites!
I love getting fancy when I make salads...but my husband has told me over and over that this is the only macaroni salad he wants to eat in our house. And I have to agree with him...it has just the right flavors...MACARONI, GREEN OLIVES, MIRACLE WHIP, and RAW ONION. That's it! Those 4 ingredients together make magic in your mouth and pair perfectly with so many summer dishes.

Nanny's Macaroni Salad

Ingredients
1 lb medium pasta shells (or your favorite pasta)
1 large jar Manzanilla olives...about 14.5 oz (the green ones with the red pepper inside), drained and cut in half
1 white onion, diced
1-1.5 cups Miracle Whip
(couple dashes of pepper)
Directions
1. Boil macaroni according to package.
2. Meanwhile, dice onion and cut drained green olives in half and toss them in a large bowl.
3. Drain macaroni when done cooking into colander and spray with cold water. Let drain until macaroni is dry.
4. Toss macaroni in bowl with onion and olives and add 1 cup of miracle whip with a few dashes of black pepper. Stir. Add more miracle whip if needed for desired consistency. Cover macaroni salad and refrigerate for at least 1-2 hours before serving.
