SImple Organic Pumpkin Pie
A great THANKSGIVING recipe for simple organic pumpkin pie!

We are all getting ready for the TURKEY... but pumpkin pie is also a must in our family for Thankgiving. When I was a kid I vividly remember opening the refrigerator with a butter knife in hand ready to carve out a sliver of leftover pie. I wouldn't even waste time putting it on a plate or closing the refrigerator! Thankfully my mom usually made two pies just so we could have some left over.
Even though pie is not the healthiest of choices for the holiday season, at least you can make it with organic ingredients. Here is my recipe for Simple Organic Pumpkin Pie. Do something nice this year for someone else ... since you usually get two pie shells in a pack, make 2 pies – one for your family and one for a family in need or a homeless shelter.

INGREDIENTS

15 oz can organic pumpln
3/4 tsp cinnamon
dash of cloves, ginger and nutmeg
1/2 tsp salt
14 oz organic sweetened condensed milk
2 organic eggs
1 pie crust
DIRECTIONS
1. Prepare pie crust according to package.
2. Mix pumpkin, spices and salt together.
3. Mix together sweetened condensed milk and eggs. Add this to the pumpkin mixture and mix all together until fully incorporated.
4. Pour mixture into pie crust and bake at 425 degrees for 15 minutes. Then bake at 350 for 35-40 more minutes. Cool completely.
TIP: Add foil to the top of the pie if you notice the crust browning too fast.
NOTE: We like our pie cold, but it can be served at room temperature as well.
