Kai Bar, Fat Belly's, Panera Bread, Gregg's, Greenwich Bay Oyster Bar, Ruby Tuesday's, and Starbucks were among the eateries with no violations. Rocky Hill School also had a clean inspection. Lobster salad, cooked shrimp, and ceviche were held between 61 and 64 degrees F in a refrigeration unit that had been shut off. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Per interview, items had been stored in unit overnight. Voluntary disposal completed.
Vacuum-packaged fish was observed fully thawed with the packaging still in-tact. Voluntary disposal completed; proper thawing methods for vacuum-packaged fish were reviewed during time of inspection.
The condensate from the ice machine is draining into a container. Condensate drainage and other nonsewage liquids must drain into a drain.

The food-contact surfaces of equipment and utensils were not sanitized. The required utensil surface temperature of 160 degrees F was not achieved during the sanitizing cycle of the dishwasher as evidenced by the failure of the themolabel (temperature indicator) affixed to the surface of a utensil to turn black. Repair service has been contacted; PIC is awaiting repair. All equipment and utensils are washed and rinsed through dishwasher, sprayed with quat sanitizer and allowed to air dry.
The concentration of the sanitizer solution in the spray bottle was 0 ppm. The required concentration for quat sanitizer is 150-300 ppm. Spray bottle was re-filled with quat sanitizer from dispenser; tested at 150-300 ppm
The pre-flush spray hose at the dishwasher area is hanging below the flood rim. A plumbing system shall be installed to prevent backflow of a liquid or gas contaminant into the water supply by providing an air gap or installing an approved backflow prevention device.

Bleach was available on site; inspector demonstrated how to manually mix a chlorine sanitizing solution in the 3-bay sink. Solution mixed to 50 ppm. Staff were instructed to sanitize all previously washed coffee urns.
The walk-in cooler was observed in poor repair; ambient observed at 61 degrees F. No Potentially Hazardous Foods observed stored in unit. Repair services were on site when inspector arrived. Per person in charge, walk-in cooler went down last night while staff were present, and all PHF items were immediately transferred to refrigeration units in good repair. Repairs were completed during time of inspection; PHF items may not be transferred back into the walk in cooler until the unit has reached 41 degrees F or below.

Cooked spinach was held at 62 degrees F, stored above the line of refrigeration in the hotline flip top unit, and raw squid cooked pasta was observed held at 47 degrees F, and 44 degrees F, respectively, in a prep unit. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Per interview, spinach had been prepared yesterday; voluntary disposal completed. Per interview, prep unit had been manually defrosted approximately one hour prior; ambient air temperature and all other PHF in unit observed in temperature control; staff were instructed to relocate squid and pasta to freezer for rapid cold holding. Temperatures of unit must be monitored.
Several animal proteins and cooked pasta were held between 42 and 44 degrees F, and raw shrimp was held at 50 degrees F in the grill station cold hold unit. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Interview about prep and stocking time of all PHF items completed with cooks and person in charge; ambient air temperature of unit observed at 43 degrees F, and remaining PHF items stored in unit observed held at 41 degrees F or below. Person in charge was instructed to adjust thermostat to colder setting; raw shrimp was relocated to the freezer for rapid cold hold during time of inspection. Temperatures of unit must be monitored; unit may not be used to store Potentially Hazardous Foods if incapable of maintaining food temperatures of 41 degrees F or below.
Cut watermelon, goat cheese, and prosciutto were held between 46 and 57 degrees F in the salad prep unit.Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Ambient air temperature of unit observed at 43 degrees F; all other PHF items stored in unit observed at 41 degrees F or below. Voluntary disposal completed for cut watermelon, goat cheese, and prosciutto during time of inspection. Staff were instructed to adjust thermostat to colder setting during time of inspection; unit may not be used to store PHF if incapable of maintaining food temperatures of 41 degrees F or below.
Raw meat was observed thawing on the counter. Potentially hazardous foods must be thawed in one of the following ways: under refrigeration (41 degrees F or less), completely submerged under running water, as part of the cooking process, or in the microwave if cooked immediately after thawing. Meat was relocated to refrigerator during inspection for proper thawing.
