Ingredients

2ea. Baffoni Farms Eggs 
2ea. Slices Irish Soda Bread 
4oz. Corned Beef Brisket

Steps: 
Poach Eggs in 180 degree water. Griddle Irish Bread. Saute Sliced Corned Beef. Using the bread as the base, top with corned beef then top with poached eggs and hollandaise.

Hollandaise:

4ea. Egg Yolks 
6oz. Melted Butter 
½ ea. Lemon for Juicing 
2ea. Lucky Shamrocks (sub micro herb for garnish) 
1 teasp Grain Mustard 
1pinch Salt

Steps:

In a double boiler add eggs yolks and temper until warm. Slowly whisk in butter, when emulsified, add lemon juice, salt & Mustard.

Irish Home Fries: 
4 ea. Yukon Gold Potatoes 
1 ea. Small Sweet Onion 
4T Butter 
3T Sour Braised Cabbage 
2 ea. Sliced Scallion 
1 pinch Salt 
1 pinch Pepper

Steps:

Boil potatoes whole and cool. Dice when cool. In a large sauté pan over medium high heat, melt butter, then sliced sweet onion.

When caramelized, add in potatoes and cook until brown. Fold in scallions & Cabbage at the end, season with salt and pepper.
