Dept. of Health Cites Businesses for 'Uncleanly' Conditions
Sodexo at Sovereign, Hortons Seafood Inc., Italian Corner and Silva's Fish Market allegedly violated health codes this past week.
East Providence businesses were cited for allegedly violating health code after officials from the R.I. Department of Health inspected premises this past week, according to reports posted to the agency's website. Most of the violations related to unsafe food temperature, cleanliness and inadequate washing facilities. All of the facilities are listed as "active."

- The can opener had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch.
- Working containers of dry ingredients are not labeled with the common name of the food. Working containers holding food or food ingredients that are removed from their original packages, such as flour, herbs, salt, sugar and spices must be labeled with the common name of the food.
- The pre-flush house in the dishwashing area is leaking and in poor repair. The physical facilites must be maintained in good repair.

- The consumer advisory provided does not disclose the foods on the menu that are raw or undercooked. At next printing menu changes must be made.
- Chlorine sanitizer solution was in excess of 200 ppm. A chlorine sanitizer solution applied to food contact surfaces must be between 50-100ppms (parts per million).

- Disinfectant was being used in place of sanitizer for food contact surfaces. Chlorime sanitizer will be used in place of disinfectant.
- Eggplant was placed in the walk-in hot, stacked between paper towels in layers and covered with plastic wrap. Eggplant temped at 50 degrees from previous day. Eggplant was disposed of. Cooling charts and hand-out was given.
- Hoses used to drain the coffee machine and other equipment were in the mop sink causing a direct cross connection. Hoses were shortened to be above flood rim.

- Food items (fish, stuffed quahogs, potatoes) were held at room temperature. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. Food had been made three hours before, all food items were moved to walk-in/deli display case.
