At end of inspection, potatoes were placed in smaller portions and allowed cooling in walk-in cooler.

Chicken pot pie, cole slaw, and chicken, located in the cold hold units, were not marked with the date of preparation. Ready-to-eat potentially hazardous food , prepared in the establishment and held for more than 24 hours, must be marked with the date of preparation.

Chemicals were stored on the same shelf with food/equipment in the kitchen. Staff removed the chemicals.

Potatoes, which were prepared an hour earlier, were temped at 85 degrees F. Proper cooling methods were reviewed. Staff separated the potatoes into smaller portions and placed them back in walk-in cooler to allow cooling.

The 3 bay sink located in the kitchen area was not in good repair. Sink is cracked. The 3 bay sink was being serviced during this inspection. At end of inspection, 3 bay sink was still being repaired. Person in charge will contact Inspector once 3 bay sink is repaired.

Observed several gaskets on the 4 door refrigeration unit in poor repair and has a build up of what appears to be mold.

The plumbing system is not adequately maintained to prevent contamination. The faucet at the 3 bay sink is leaking and has tape on the end of the faucet.

Cleaning and sanitizing procedures are not done in a manner to prevent contamination of food contact surfaces. Observed several blades on the food processor not clean. two juice pressing machines have a build up of residue. Units were taken out of service until properly washed, rinsed and sanitized.

The dishwasher sanitizer chlorine is reading less than 50ppm. Firm must fix and email or fax invoice/correction to RIDOH. Information provided to the firm.

Observed eggs stored above RTE vegetables. Corrected during the inspection.
