Dr. George Saperstein will speak about the importance of preserving heritage breeds' genetic diversity for fitness to changing environments, parasite resistance, hardiness, mothering, foraging ability, performance in traditional husbandry systems, and great taste.
During this lecture, Patrick Beck will present a case study on pastured Silver Fox rabbits as a production model of “Save Me By Eating Me”. Mr. Beck will tell us about his program in which families raise their own kits in pasture pens, providing an important return to the land for many people, whose only experience is meat in packaged form.
