PORTSMOUTH, RI — The health department inspected 29 Portsmouth eateries in its latest round of visits. Sixteen had at least one violation, but 13 had no violations. Here is the list. If your favorite spot isn't here, then it wasn't inspected recently.

The pipes, walls, ceiling tiles, and tiles protecting ceiling lights (kitchen area) have an accumulation of dust, grease, and food residue Several of these areas are also in poor repair. The physical facilites must be maintained in good repair.

Cooked chicken breasts prepared yesterday had temperatures between 52 and 54 degrees F in one of the prep units. The ambient temperature of this unit was observed to be 50 degrees F. This chicken was voluntarily disposed of during inspection. As this unit was observed to be overfilled, several containers of potentially hazardous foods were moved to other prep units. This prep unit was observed to have an ambient temperature of 39 degrees F by the end of the inspection.
The deli slicer was observed to have a slight accumulation of dried food residue. Inspector reviewed proper cleaning and sanitizing of deli slicer and it was properly washed, rinsed, and sanitized at the time of this inspection.
Fly tape was observed hanging near food prep area. Chemicals must be stored to prevent the contamination of clean equipment, utensils linens and/or single service by spacing or partitioning and locating them in an area that is not above food, equipment utensils, linens and single service articles.
Proper cooling methods were not used for potentially hazardous foods. Per interview of employees, chicken was placed hot in the refrigerator in covered containers greater than 4 inches deep. Chicken had been cooked less than 1 hour prior to inspection and was separated into smaller containers without covering for proper completion of cooling.
The nonfood-contact surfaces of the soft serve ice cream dispenser as well as the frappe/shake mixer have an accumulation of dried food residue and other debris.

Stuffing located in a kitchen refrigerator had a temperature of 44 degrees F. This stuffing had been in this refrigerator for more than 24 hours and was voluntarily disposed of during this inspection.
The deli slicer as well as a couple of soup ladles had an accumulation of dried food and debris. The food contact surfaces of equipment must be clean to sight and touch.
Chicken, potato salad, and pasta salad stored in a prep unit behind the counter were held between 46 and 48 degrees F. Potentially hazardous food must be held at 41 degrees F. or below except during preparation, cooking or cooling. These foods were placed in this prep unit less than 2 hours ago and were moved to the walk-in cooler. This unit will not be used until it is serviced and holds a consistent temperature 41 degrees F or below.

Tongs observed hanging between a utensil rack and the wall, touching the wall. PIC moved tongs to be washed, rinsed, and sanitized. Utensils will be stored to prevent contamination.
The pre-flush spray hose at the 3-bay sink is hanging below the flood rim. A plumbing system shall be installed to prevent backflow of a liquid or gas contaminant into the water supply by providing an air gap or installing an approved backflow prevention device.

The deli slicer, ice machine, and several cooking utensils had an accumulation of dried food and debris. The food contact surfaces of equipment must be clean to sight and touch. The utensils and deli slicer COS. The ice machine is to be washed, rinsed, and sanitized later today.
Working containers, used for storing chemicals taken from bulk supplies were not marked with the common name of the chemical.

The cutting boards in the prep areas as well as a couple of the small cutting boards observed to be scratched and scored. Cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Buckets of scrambled egg mixture observed stored on the floor in the walk-in cooler. Food must be stored at least 6 inches above the floor.
A knife was observed stored between the two prep units. During pauses in food preparation, utensils must be stored on a clean surface or in a clean protected location. Knife was moved to warewashing area to be washed, rinsed, and sanitized.
The nonfood-contact surfaces of the shake blender have an accumulation of food residue and other debris.

The required utensil surface temperature of 160 degrees F. was not achieved during the sanitizing cycle of the dishwasher as evidenced by the failure of the thermolabel (temperature indicator) affixed to the surface of a utensil to turn black. The establishment will use the 3-bay sink to wash, rinse, and sanitize.

The ice machine had a slight accumulation of black residue. The food contact surfaces of equipment must be clean to sight and touch. PIC turned machine off during this inspection. This ice machine will be properly drained, cleaned, and sanitized before it is used again.
Macaroni and cheese and several deli meats located in the 2 door reach-in refrigerator, were not marked with the date of preparation. Ready-to-eat potentially hazardous food , prepared in the establishment and held for more than 24 hours, must be marked with the date of preparation.
Working containers, used for storing chemicals taken from bulk supplies were not marked with the common name of the chemical.
The pizza server observed to be stored on an unclean surface between 2 prep units. During pauses in food preparation, utensils must be stored on a clean surface or in a clean protected location.
The light above the cook line is in poor repair. The physical facilities must be maintained in good repair.
