The quarternary ammonia concentration in the sanitizing solution of the 3-bay sink was less than 150 ppm. According to the manufacturer's use directions, the concentration of the quarternary ammonia must be 150-400 ppm. Quat dispenser connected to cold water, per manufacturer's specs water should be 65-75 degrees F. Person in charge to call for service.

Observed a visibly dirty knife stored in the knife rack. Knife removed from service for cleaning.

Pasta, which was prepared in advance, was not cooled to 70 degrees in 2 hours and then to 41 degrees F within 4 hours. Pasta was voluntarily disposed of.

Observed tomatoes stored on the floor in the walk in cooler. Food must be stored at least 6 inches above the floor.

Single service items stored in the basement are not being stored in their original protective package.

Food & non-food contact surfaces cleanable, properly designed, constructed & used: 1. The gasket to the 2nd deli unit in the kitchen is in poor repair. 2. The faucet to the three bay sink is in poor repair. 3. The 1-door deli unit is not maintaining a temperature of 41 or below. Person in charge to call service on unit for repair.

The nonfood-contact surfaces of the interior of the ice machine and ice scoop holder have an accumulation of dust, dirt, food residue and other debris.

The receptacle in the employee restroom is lacking a cover. A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.

The outside dumpster is not covered. Receptacles and waste handling units for refuse, recyclables and returnables shall be kept covered.

Knives that were stored as clean on the knife rack had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch. Knives were cleaned and sanitized during inspection.

Bags of chicken and beef were observed thawing in a container on a shelf in the kitchen. Potentially hazardous foods must be thawed in one of the following ways: under refrigeration (41 degrees F or less), completely submerged under running water, as part of the cooking process, or in the microwave if cooked immediately after thawing. Food was relocated to walk-in cooler during inspection.

The handle of the tongs for the noodles was being stored in the food. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container. Tong handle was removed from food during inspection.

The gasket on the freezer is torn. Person in charge informed that gasket needs to be repaired or replaced.

The nonfood-contact surfaces of all of the refrigeration gaskets in the kitchen have an accumulation of dust, dirt, food residue and other debris. Person in charge informed that gaskets need to be cleaned.
