You can find yourself in a food rut when following a low-carb eating plan. This rut usually causes us to start digging a hole and filling it with breads, pastas and desserts. Pretty soon the hole is filled with simple carbs and we are covered in a mess of carbs, sugar and fat that brings us right back to where we started.

Here are some tasty ways to make low-carb eating fun and filling.

Mashed Potatoes: Use cauliflower instead of potatoes. Boil your cauliflower until tender and prepare with Smart Balance Butter and heavy cream. Feel free to add onion or garlic powder and black pepper for an added
kick.

Beef Stroganoff: Use eggplant instead of noodles in your stroganoff dinner. I soften the egg plant by brushing it with a little olive oil and broiling it for 10-15 minutes first. Cut the eggplant into bite sized pieces and add it to your stroganoff. It tastes just as good and is much better for you.

Spaghetti: Use spaghetti squash instead of noodles. "All you have to do is
cut the squash in half and remove the seeds. Then place each half — cut side
down — on a plate with a quarter cup of water," says Elizabeth Perreault,
a chef at Colorado's Culinary School of the Rockies. Nuke the squash for 10
minutes or until it's soft to the touch. Let it cool, then scrape out the
"spaghetti" strands and top with pasta sauce and cheese.
