- Tiffany Roberts Sahaydak, head coach of the UCF women's soccer team, is serving as assistant coach in the U.S. women's national team training camp in Austin that started on Wednesday, Jan. 19. The camp is an annual event and this "is the first time the national players will get to play together this year." - The National Guard's All Guard Endurance Team competition was held in Austin on Saturday, Jan. 15 and 120 Guard members "put their endurance and strength to the test." After running 500 meters in the Austin Convention Center, they participated in a "system known as DEKAFIT, from the Greek word for 10" in which they "competed on 10 exercise machines" that test "endurance and strength in different ways." Brig. Gen. Michael Oster, assistant adjutant general for the South Dakota National Guard's Joint Force Headquarters and keynote speaker at the awards ceremony, said "the competition makes you feel good about who you are, and it makes you feel good about what you do." - If you're in a mood for sushi, a food truck that focuses on hand rolls just opened up on Thursday, Jan. 20. The new eatery is called Texas Sushiko and is located at the "tasting room Texas Sake Company in the Yard development at 440 East St Elmo Road, Suite B-2 in the East Congress neighborhood." The menu features tasty rolls such as "king crab poached in butter and topped with truffles; fatty bluefin tuna; pork belly that is sous-vided and grilled paired with kimchi; torched salmon with a yuzu marmalade; and the sous-vided/grilled oyster mushrooms with avocado, kimchi, and greens. For now, only dine-in service is available indoors or outdoors on picnic tables, and the days and hours are 4-9 p.m. Thursday, 3-10 p.m. Friday, 1-10 p.m. Saturday, and noon-5 p.m. Sunday.
