A Veterans Day Tribute to Local Business Owner
From Guns to Buns, Local Veteran Thrives with Erbert & Gerbert's Sandwich Shop in San Marcos.
Erbert & Gerbert’s Sandwich Shop, the national sandwich chain known for its flavorful gourmet subs, debuted its first Texas location in October of last year at 214 N. LBJ Drive in San Marcos. Since opening, the business has been thriving. The restaurant is owned by Harker Heights resident and U.S. Army veteran Lindsey Gentry, who signed on to become an Erbert & Gerbert’s area developer. Gentry plans to open three locations by 2016 with the possibility for further expansion throughout the state.
In the Army, Gentry served in Iraq for 15 months before commanding the Headquarters Support Company, Warrior Transition Brigade, part of a recuperation program for soldiers at Fort Hood. Despite being passionate about her military career, she left her post in August 2012 to pursue her lifelong entrepreneurial goals.
“It was finally time for me pursue the plans that had been formulating in my mind for years,” Gentry said. “My military service helped me develop the leadership and organizational skills necessary to build a strong and successful business, so I know I am extremely well-prepared for this opportunity.”

She chose to open an Erbert & Gerbert’s Sandwich Shop because as a college student in the chain’s hometown of Eau Claire, Wis., she ate at the flagship restaurant frequently. Even after moving to Texas, she said, the memory of her favorite sandwiches stayed with her, and when she looked into business opportunities, Erbert & Gerbert’s became the obvious choice.
“Between the outstanding products and the strong business model, I knew I wanted to be a part of this company,” Gentry said. “The corporate team has a great vision for the company’s future, and I wanted to be part of that at the grassroots level by bringing the brand to Texas for the first time.”
