🌱 The Bayou Lifts Vax Requirement + Rise Of SLC's Green Pig Pub

Here are the top three stories today in Salt Lake City:

  1. Salt Lake area restaurant owners who hail from far away places do more than cook up tasty eats, they provide cultural and geographic education, too. Some enterprises like Kiki Sharma's Bhutan House which brings the flavors of Nepal and Bhutan get their start from The Spice Kitchen Incubator based in SLC before heading out to establish their own food truck or brick and mortar. In Utah, less than 2% of the population is African-American, so for soul food chef Julius Thompson, his dishes become a conduit into the history of the culture behind the food, which traces back to slavery for a lot of it.   2. The Bayou, Salt Lake City's only bar and restaurant to require proof of vaccination in order to eat and drink there, has now lifted its COVID-19 vaccine requirement. The establishment took to Twitter to explain why, citing a specific metric they looked at when implementing the policy, and saying that same metric has fallen below their threshold and sparked the reversal of the vaccine mandate. That metric was an infection risk of under 10% for groups of 50 or more. Salt Lake County hit below that for the first time this week, coming in Tuesday at 9 percent. (Salt Lake Tribune)
  3. Bridget Gordon mortgaged her house and sold her car, and her motorcycle, all just to open up one of Salt Lake's most popular watering holes, the Green Pig Pub in downtown SLC. In doing so she turned a big risk into a handsome reward and carved out a niche for a successful woman-owned business in a niche male-dominated bar scene. It's been a journey for the longtime bartender-turned-business-owner, and she has some thoughts on why she's a relative rarity, admitting it has a lot to do with the industry's long hours that clash with the primary caretaking role for children most women in Utah still embody.
