🌱 SLC Schools Short On Lunch Staff + Back-to-Back Mountain Rescues

The quickest way to get caught up on the most important things happening today in Salt Lake City.

Good morning, neighbors! Joseph Peterson here with the latest Salt Lake City Daily.


First, today's weather:

It's looking like a few morning showers for Salt Lake with a high of 49 and a frosty low of 32.


Here are the top three stories in Salt Lake City today:

  1. Staffing problems in school lunchrooms have lead to nutrition concerns as schools throughout Salt Lake City struggle to find enough staff to properly manage more than 1,000 meals a day. Kitchen staff are cutting down on foods that take longer to cook, and resorting to other creative measures to continue providing the same number of lunches every day. But fewer staff means fewer lunch lines which has created a bottle neck and increased the time it takes to get lunch food, with some students skipping out on the line, and skipping lunch altogether.   2. It's been a busy season for the Salt Lake County Sheriff's Search and Rescue team but this weekend especially, as volunteer rescuers dealt with back-to-back rescues when two separate hikes in different areas got lost and needed rescuing. One lost hiker struggled to keep warm while navigating deep snow fields near Ennis Peak. As rescue teams were leaving the mountain, they got their second call of another solo hiker who ran out of daylight and took a wrong turn. (Gephardt Daily)
  3. Nearly 2,500 nursing positions remain unfilled in Utah, so the University of Utah is making some changes to the way its nursing school operates in order to cycle more students through the program. The U's College of Nursing plans to increase the number of students in its prelicensure track by 25% by adding a summer enrollment option, a change that the college says will take a committment of more than $400,000 each year to properly staff and administer 3 rotating tracks instead of just two.
