Ashburn Health Inspections: Cafe Hyderabad, Chopsticks House
The Loudoun County Health Department recorded violations at facility around Ashburn, Dulles, and Sterling during recent inspections.
ASHBURN, VA — Several facilities around Ashburn recorded violations during health department inspections from Aug. 31 to Sept. 6.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection

- Food employee observed touching the ready to eat fried spring roll with bare hands to place them in bags.
- Ventilation hood in kitchen observed with heavy accumulation of dust and grease.

- Raw chicken (meant for employee) was stored over yogurt in cooler. Raw chicken is not on the menu and not cooked for the children.

- Raw steak, salmon and shrimp registered between 45°F-46°F in low boy drawer refrigerator in kitchen. Said drawers were observed not closed properly.
- Humus and cut leafy greens registered between 46°F-50°F in top section of low boy refrigerator. Said unit was left open or opened frequently during lunch rush.
- Date marking not provided to two sauces (harrisa and shkug) in the walk in refrigerator in kitchen. Said sauces are held for 3 days.

- Observed food employee eating at a metal shelf in the kitchen area were there was dry pasta and clean food equipment potato cutter.
- Observed dishwasher only reaching a sanitizing temperature of 158F after several tries.
- Food establishment is using reduced oxygen packaging (ROP) of hamburger patties, and ground pork without a HACCP plan that does that would describe how the package shall be labeled.
- Observed bag of onions stored on the floor and in the walk in cooler marinara in large container store on the floor.
- The hand sink in the kitchen was not draining there was water in the sink bowl.

- Facility observed without sanitizing solution. As per the PIC facility ran out of sanitizer and has ordered more.
- Container of tuna salad in lowest shelf in the walk in refrigerator registered at 44°F. Said tuna salad was prepared and left in walk in refrigerator since a day before.

- Upon entry observed employee drinking "Gleaton" (cinnamon, milk, sugar drink) from an open cup behind the counter in the food service area.
- Observed Raw Chicken stored over Raw Beef and Raw Shell Eggs (well wrapped).
- Observed wiping clothes in a sanitizer bucket with ppm exceeding test maximum.
- Observed ice scoop laying flat on top of ice. Ice scoop appears to have very slight mold like substance.

- A large butchering knife was observed stored on a magnetic strip with visible food debris.
- Spring rolls and bins of rice and lomein in the walk-in cooler were observed with no date marking.
- A spray bottle containing a clear liquid was found with no identifying information.
- Containers of salt, sugar, and MSG observed on the cooking line with no identifying labels.

- A bottle of whiskey observed with several dead fruitflies in it.
- Several live fruitflies observed in bar area and rear area in kitchen. As per the owner regular monthly pest control treatment is conducted at the facility. They are currently working with Ehrlich pest control company to eliminate pest in the facility. As per the owner the last pest control treatment visit was on August 11th, 2021.

- Comments: All handwashing facility in the facility observed without paper towels.
- As per the PIC, facility purchases cooked gravy/sauce from Tez Indian Grill, an Indian restaurant in Herndon to make their curries.
- Several small containers of Sev pudding (vermicelli pudding) in the low boy reach in refrigerator observed with mold growth in them.
- Fried chicken registered at 53°F on the food prep table next to the microwave. As per the PIC said chicken was taken from the reach in refrigerator to reheat a portion for order and left the remaining on said table for 30 minutes.
- Date marking not provided for prepared ready to eat food items such as goat biryani, chicken biryani, veggie biryani, mango chicken, chickpeas and raita in the three door reach in refrigeration unit. As per the PIC said food items were prepared more than 24 hours prior and can be held for up to 5 days.
- Condiments and spices are not labeled to identify the contents.
- Large containers of salt and sugar observed on floor.
- Several utensils observed stored in a container of standing water at room temperature in kitchen.
- Proper test strip not provided for measuring the concentration of the sanitizer level.

- The Quat sanitizer at the three basin sink is barely registering when tested. The concentration is not sufficient enough to sanitize food contact surfaces.

- Observed in walk in cooler skim milk with an expiration of 9/5, and date of inspection was 9/6.
- Observed milk 2% 45F in reach in cooler on 4th floor service side 2 at an improper cold holding temperature.
- Observed cut lettuce and egg salad made about an hour and half before EHS found in 1 door reach in cooler in plastic containers with lids on tightly.
- Observed the accumulation of soil residue from splashing of juice that has accumulated on the top plastic part where juice spouts pour juice.

- The hand sink located next to the three basin sink does not have a hand drying provision. Person in charge provided paper towels at the hand sink.
- Cooked chicken wings in the walk-in cooler registered at 44F, outside of acceptable temperature (41F).
- A bag of cooked chicken wings, a container of cooked chicken wings and a container of Tanir sauce were found with no date marking.

- A single-use container with no handle was observed being used to scoop rice.
- The low temperature dishwasher is not dispensing sanitizer, and is not sanitizing food contact surfaces.
- Date marking is not being performed in the facility. Packages of cooked ribs, spring rolls, sticky rice and reconstituted noodles were all observed with no date marking.
- This facility uses time as the public health control (TPHC) on raw bean sprouts, reconstituted noodles and cut cabbage but is unable to provide the time log worksheet depicting that practice. No time stamps were observed by the EHS on the containers of these food items.
- An aerosol can of RAID was found stored on a shelf in the kitchen.
- The main ice machine located outside of the kitchen was observed with a build-up of black soil debris on the deflecting portion of the machine.

- EHS observed a food employee handle raw burger patties with gloved hands and then proceeded to handle ready to eat burger buns without changing their gloves.
