The Loudoun Health Department recorded violations at several restaurants around Ashburn, Dulles, and Sterling during recent inspections.
ASHBURN, VA — The Loudoun County Health Department recorded violations at several facilities in the Ashburn area during recent restaurant inspections. The most recently published round of inspections occurred between July 6 and July 12.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- The low temperature dish machine is not dispensing sanitizer, the three basin sink has a sanitizing system that is not functional. Food contact surfaces are not being sanitized.
- EHS observed multiple prepared foods that are not listed on the menu. When asked, PIC told the EHS that those foods were leftover from a banquet that had already passed. Same food items offered to one consumer may not be offered to another.
- Banquet foods were temped outside of appropriate temperatures. (42-46F)
- No date marking was observed in the "banquet" walk-in cooler.
- EHS observed Lamb Shanks in reduced oxygen packaging actively being sous vided. Establishment does not hold a variance for this method of cooking
- EHS observed facility was utilizing Reduced Oxygen Packaging (ROP) to sous vide proteins, without a variance.
- Foods found in the banquet walk-in were not covered.

- Two functional food temperature measuring devices are not present in the cafe kitchen.

- Items cycled through the 3 compartment sink are not being sanitized - the quat sanitizer is labeled for use at 200-400 ppm and the solution in the sink is testing at 100-150 ppm
- When asked, the Person in Charge was only able to locate one food thermometer.
