Ashburn Health Inspections: Cockroaches, Dirty Ice Machines
The Loudoun County Health Department recorded violations at several facilities around Ashburn during recent restaurant inspections.
ASHBURN, VA — Several facilities around Ashburn recorded violations during health department inspections from Oct. 12 to Oct. 18.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Handwashing facility in the kitchen next to the mop sink observed without paper towels.
- Grilled chicken registered at 87°F on food prep table in kitchen. Said food was cooked an hour ago and was being held there till the ordered to be served.
- Turkey, ham, cut tomatoes, roast beef and cheese registered at 44-45°F in top section of two door low boy refrigerator. Said section of the unit observed left open.
- Sanitizer test for the dishwasher at the bar not provided.
- Handwashing facility next to the mop sink observed slow to drain.

- Observed the white nozzles of the juice machine with a build up of juice.
- There was no available way to sanitize other then the high temperature dishwasher.

- A pan of mashed potatoes observed not properly cooled (46F) to prevent the growth of harmful bacteria. The pan of mashed potatoes was saved from the previous night in the low boy cooler next to the microwaves.
- Improper methods used to thaw reduced oxygen packaged (ROP) raw tuna steaks. Tuna observed left in ROP state for thawing under refrigeration.
- Employee personal belongings- purse, jackets, backpack observed stored in dry storage prep area handing over dry storage food containers.

- The hot water sanitizing dish machine was observed with a high recording thermometer reading of 154 F after the thermometer was ran through the dish machine 5 times. The sanitizing temperature on the thermometer needs to be at least 160 F to sanitize food contact surfaces.
- The concentration of quat sanitizer in the container in which the internal temperature measuring thermometer was stored was observed over 400 ppm. The concentration was too high.
- The kitchen manager stated they used the last of their sanitizer test strips this morning and was out at this time.

- Facility does not have written procedures for the cleanup of vomiting or diarrheal events.
- Employee touched personal items and continued working without washing hands. Employees observed changing gloves without washing hands when hand washing was required.
- TCS food items in the walk in refrigerator cold holding at improper temperatures. No temperature control or time control plan provided for salad ingredients.
- Food prepared by the facility and kept longer than 24 hours is not date marked for disposition.
- No time control procedure established for the gyro meat.
- Time control plan for boxed salads is not being followed.
- Observed cockroaches and evidence of cockroaches under the 3 compartment sink, under the shelves located between the grill line and the door to FOH, under the grill, and in cabinet located beside stand up refrigerator in the FOH.

- The Atlantic salmon is served cooked to order and there is no indication on the packaging that the fish is aquacultured or frozen for parasite prevention or destruction purposes.
- All animal food items served undercooked are not disclosed by being asterisked to the reminder footnote (seared ahi tuna).
- Test kits are not available for each chemical sanitizer used in the facility - chlorine test strips not available for the bar glasswasher.
- The facility has no means to verify that the high temperature dish machine is sanitizing.
- There is no sanitizer being dispensed by the bar dish machine (sanitizer tested at 0 ppm and the container was empty) and there is no visual means to verify that sanitizers is being dispensed or visual or audible alarm to signal if sanitizer is not being delivered.
- The interior ceiling of the ice machine bin is noted in need of cleaning.
