Ashburn Health Inspections: Cooper's Hawk Winery & Restaurant, Subway

The Loudoun County Health Department recorded violations at several restaurants in the Ashburn area during recent inspections.

ASHBURN, VA — Several restaurants around Ashburn, Dulles, and Sterling recorded violations during recent inspections from the Loudoun County Health Department. The most recent inspections occurred between May 18 and May 24.

Many COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

    • Total violations: 1
      • The facility does not have verifiable means of an Employee Health Reporting Policy.
  • Subway, 21950 Cascades Parkway Sterling, VA 20165
    • Date inspected: May 19
    • Total violations: 2
      • Observed Meatballs Hot Holding at 125F on the Line.
      • Observed Facility to be using Quat based sanitizer with no valid test kits (all expired)
  • Springhill Suites Ashburn Dulles North Hotel, 20065 Lakeview Center Plaza Ashburn, VA 20147
    • Date inspected: May 19
    • Total violations: 4
      • A certificate of food safety was not posted and was unable to be provided when requested by the EHS.
      • The facility does not have a written policy directing employees on the proper clean-up of vomit & diarrheal events.
      • The hand washing sink in the kitchen does not have paper towels (dispenser is empty). Employee was not able to locate hand towels to refill during inspection.
      • The facility does not have test strips to correctly monitor the concentration of sanitizer used. When food employee was asked, they were unaware of what test strips were - testing is not being performed.

      • The person in charge failed to state the big six foodborne illnesses.
      • Chicken curry and vegetable curry registered at 43°F - 45°F in two door low boy refrigerator. As per the PIC said unit was opened several times during lunch time.

    • Date inspected: May 19
    • Total violations: 1
      • The prepared ready-to-eat (RTE) food such as steaks and hush puppies in the walk in refrigeration unit not properly dated for disposition. Said food were prepared, frozen in walk in freezer for days and then placed in walk in refrigerator a day before. As per the PIC said food shall be held for four more days.
  • Moby Dick House of Kabob, 22000 Dulles Retail Plaza #160 Sterling, VA 20166
    • Date inspected: May 19
    • Total violations: 2
      • A box of tomatoes was observed stored on the floor of the walk-in cooler.
      • Two large spoons used for scooping rice were found stored in between uses in a container of stagnant water.
  • La Fe Bakery & Deli, 95 Sugarland Run Dr Sterling, VA 20164
    • Date inspected: May 20
    • Total violations: 3
      • The hand sink in the back portion of the kitchen is still missing drying provisions for washing hands.
      • No date marking has been done for stored TCS (time/temperature control for safety foods).
      • Plastic grocery bags in use to store foods is still being utilized.

    • Total violations: 2
      • No date marking of foods was observed within the facility.
      • Two spray bottles with cleaning chemicals inside of them were observed with no label.
  • Bebop, 20630 Ashburn Rd #172 Ashburn, VA 20147
    • Date inspected: May 20
    • Total violations: 2
      • Observed no verifiable manner, that all employees are aware to report to the person in charge (PIC) information about their health and activities as it relates to diseases that are transmissible through food
      • Observed raw shell eggs stored over ready-to-eat sauces and tomatoes.

    • Total violations: 3
      • This facility utilizes time as a public health control for TCS (time/temperature control for safety) foods on the buffet line. The buffet does have heating and cooling elements but they are unable to maintain proper temperatures of the TCS foods. The facility does not have written procedures in place for time control nor are the employees tracking the time the TCS foods sit out of temperature control. This is a repeat violation.
      • Apples and a basket of bread are offered for consumption on the buffet line. Said apples and bread are not protected from contamination (not sitting below a sneeze guard).
      • The double light bulb fixture in the walk in cooler is not shielded. The cover broke and it has not been replaced according to the PIC.
  • Swaad Kitchen LLC (Gordon's Kitchen), 506 Shaw Rd #329 Sterling, VA 20166
    • Date inspected: May 23
    • Total violations: 2
      • No certified food manager (CFM) present in that the CFM certificate expired 2/13/2022. As per the person in charge (PIC), she has signed up for renewal next week.
      • Food employee reporting agreement signed by employees not provided during inspection.
  • Subway, 42010 Village Center Plaza #140 Aldie, VA 20105
    • Date inspected: May 23
    • Total violations: 2
      • There is no record of an employee health policy for employees indicating reporting training of the signs and symptoms of illness.
      • Observed: Signage informing employees to wash hands is not present at handsink adjacent/near cash register.
  • Carrabba’s, 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: May 23
    • Total violations: 1
      • EHS observed 2 large lexan containers of pomodoro sauce made on 5/22/2022 noted as improperly cooled to prevent the growth of harmful bacteria. Sauce internal temp measured at 55F. THe sauce was prepared the night before.

      • Observed spreader in knife holder and slicer with food debris.
      • Observed Bolognese sauce 50F and jambiya 48F in small prep cooler by stove and Asian cabbage 49F in salad prep cooler. Another small prep cooler mozzarella 47F, roasted tomatoes 48F, pesto 47F and shredded cheese 47F.
      • Observed butane fuel stored next to and over food items.
      • Observed fish thawing on rack in the kitchen.

    • Date inspected: May 24
    • Total violations: 4
      • Observed ground meats store over fish.
      • Observed raw thinly sliced lamb/beef on gyro broiler at an improper cooking temperature and had been on gyro broiler for about two hours.
      • Observed tomato sauce 114F on the stove at an improper hot holding temperature.
      • Observed cut tomatoes 44F and yogurt 44F in prep cooler at an improper cold holding temperature.
