Ashburn Health Inspections: Flies, Moldy Cheese

The Loudoun Health Department found violations at several restaurants in the Ashburn area during recent inspections.

ASHBURN, VA — Several facilities around Ashburn recorded violations during health department inspections from Sept. 14 to Sept. 20.

Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection

Here are the most recent restaurant inspections in the Ashburn area, according to the Loudoun County Health Department.

  • Kitchen by Wolfgang Puck(The), 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: Sept. 14
    • Total violations: 13
      • The person in charge was not present in the facility upon start of the inspection. Several violations noted during the routine inspection.
      • None of the employees during the inspection are a certified food protection manager. Employees not able to contact a certified food protection manager.
      • The dish washer (food employee) has an open exposed wound on their left hand (palm). The wound is only covered with a glove. the employee is not wearing an impermeable cover below the glove.
      • Food employee observed eating a bowl of oatmeal while prepping (slicing mushrooms in the prep kitchen).
      • The hand sink on the line is partially blocked with a sheet tray that has burger buns on it.
      • The back kitchen hand sink does not have sign reminding employees to wash their hands.
      • There is no hand soap at the hand sink at the bar. The bartender states the dispenser is broken.
      • Pan (3rd pan) of scrambled raw shell eggs stored on the top shelf of the reach in cooler next to and above produce.
      • Both the back kitchen high temperature dish machine and the front bar high temperature dish machine have utensil temperatures measuring at less than 160F. Wares are not getting sanitized after cleaning and before use.
      • Rice hot holding at improper temperatures in the steam table on the line 121F The food employee stated that the steam table is broken. When asked why a broken piece of equipment is being used the food employee stated "I don't know"
      • TCS (time temperature control for safety) foods held in the drawers of the prep cooler are cold holding at improper temperatures. Artichokes 54F Chicken 51F halved tomatoes 51F.
      • The facility does not have an irreversible registering temperature indicator
      • Interior of prep coolers on the line observed with an accumulation of food debris and grime.
  • & Pizza, (Terminal B), 1 Saarinen Cir. Dulles, VA 20166
    • Date inspected: Sept. 14
    • Total violations: 1
      • The hand sink at the bar does not have a sign posted reminding employees to wash their hands and to differentiate it from the dump sink at the bar.
  • Cafe Hyderabad, 22621 Amendola Terr #170 Ashburn, VA 20148
    • Date inspected: Sept. 15
    • Total violations: 2
      • Date marking not provided for all prepared ready to eat food items such as biryani and curry in the three door reach in refrigeration unit. As per the PIC said food items were prepared more than 24 hours prior and can be held for up to 5 days.
      • Several utensils observed stored in a container of standing water at 95°F temperature in kitchen.
  • Starbucks Coffee #29478, 44735 Thorndike St #100 Ashburn, VA 20147
    • Date inspected: Sept. 15
    • Total violations: 2
      • Food employee reporting agreement (Form 1B) not provided during inspection.
      • Several live fruit flies observed in rear food storage area and in front food prep area.
  • Meal Dealers, LLC, 44225 Mercure Circle #170 Dulles, VA 20166
    • Date inspected: Sept. 15
    • Total violations: 11
      • Open energy drink can on prep table on the line with dry goods.
      • Hand sink at the back of the line not up to compliance. No soap, paper towels or a hand washing sign reminding employees to wash their hands.
      • The hand sink near the oven is not easily accessible. A table and an air purifier is in front of it and an immersion blender was observed stored in the sink.
      • EHS asked the person in charge (PIC) what food contact sanitizer they are using at the 3 compartment sink. The PIC stated that they were not washing dishes today. Active food prep is happening in the kitchen today. Raw chicken is being cut, sweet potatoes are being cut and cooked, knives and cutting boards used. The PIC stated that utensils used today would be just washed with soap and rinsed.
      • None of the prepared ready to eat (RTE) TCS (time temperature control for safety) foods (chicken, sauces, beef etc) in the walk in cooler have a date mark on them. According to the PIC some were prepared Saturday, some on Monday, and some were pulled from the freezer.
      • Medicines (tylenol bottle etc.) stored directly on prep table near the line.
      • Abundance of flies observed throughout the facility. Floor drains observed exposed and dirty with food debris. According to the PIC pest control is doing weekly service on the kitchen. Observed spray bottle of raid beneath prep table. EHS discussed discontinuing use of home style pest control chemicals. According to the PIC the raid is not used because the pest control operator advised against it.
      • Large lexan containers of food (chicken and sweet potatoes) observed stored directly on the ground during preparation.
      • The dish machine in the facility has been non-functional for years. The facility washes all wares at the three compartment sink.
      • The three compartment sink faucet is broken and leaking- nozzle for cold water is missing. According to the PIC the parts are in the building they just have to be installed. Below the three compartment sink the pipe was disconnected and water was dripping on the floor.- the PIC did reconnect the pipe when pointed out
      • Several missing ceiling tiles in the kitchen above a dry storage rack. According to the PIC the tenant above them had a leak and the ceiling tiles were ruined and never replaced.
  • First Break Sports Bar, 46970 Community Plaza #200 Sterling, VA 20164
    • Date inspected: Sept. 16
    • Total violations: 1
      • Observed Shredded Monterey Jack Cheese cold holding in the prep top with a mold like substance throughout.
  • Siam Spice Thai Cuisine, 22330 S. Sterling Blvd A129 #129 Sterling, VA 20164
    • Date inspected: Sept. 16
    • Total violations: 4
      • Observed the following items cold holding above 41F in the 2 DR Cold Holding Unit: Raw Beef 52F, Raw Chicken 52F, Raw Shell Eggs at 51F, and tofu at 52F.
      • Observed rice scoops in stagnant water and tongs on oven handles.
      • 2 DR Standup has ambient temperature of 52F.
      • Observed bleach test kit to have an expiration date of 11/21.
  • St. Paul VI Catholic High School, 42341 Braddock Rd Chantilly, VA 20152
    • Date inspected: Sept. 16
    • Total violations: 3
      • A large container of syrup observed with mold growth in them in the walk in refrigerator. As per the PIC said food had been in said unit for several days.
      • Chicken wraps registered at 45°F in open top section of low boy unit in food service area.
      • Maximum temperature recording thermometer observed not functioning.
  • El Dorado Grill, 22034 Shaw Rd #101 Sterling, VA 20164
    • Date inspected: Sept. 16
    • Total violations: 10
      • Observed food employee putting on gloves before beginning food preparation without first washing hands.
      • Observed only handwashing sink in the prep area to be used for storage of steel wool, pans, and various items.
      • Observed Raw Chicken, Raw Salmon, and Raw Beef over Ready to eat items including: beer, lettuces, etc.
      • Observed the following items in a state of cold holding with a temperature above 41F: Milk x2 45F, Cooked Cabbage 68F, Shredded Mozzarella Cheese at 45F and Shredded Cheddar Cheese at 45F.
      • Observed Over Easy Eggs available of menu with no consumer advisory statement advising consumer of risks associated with consumer undercooked animal products.
      • Observed 2 Spray cans of PT565 Plus XLO insecticide above clean dish storage area in the back of house. Observed another can at bar area.
      • Observed light shining through the bottoms of both doors to the outside. Observed many fruit flies and flies throughout establishment.
      • Observed cloths in wiping buckets with a bleach concentration of 250ppm.
      • Observed handwashing sink in the back to be incapable of generating cold water. Hand washing sink is 120F, and uncomfortably hot, making hand washing less likely.
      • Observed soiled mops pressed against wall to dry.
